Sometimes it’s fun to change around a classic and that’s exactly what I did with today’s recipe.
Cucumber Mint Iced Tea is a refreshing twist on regular iced tea and is so good, my whole family loves it!
This Cucumber Mint Iced Tea is sweetened with a touch of honey. Real mint leaves and slices of cucumber steeped in Lipton Cold Brew Iced Tea result in a delicious beverage you’ll want to keep stocked in your fridge!
I’ve never been a big iced drinker, but when Lipton Iced Tea asked me to try out their Cold Brew Iced Tea recently, I really enjoyed it. It’s delicious all by itself and when I tweaked the recipe to make this Cucumber Mint Iced Tea, I discovered I love it even more.
One of my favorite times to serve this Cucumber Mint Iced Tea recipe with Lipton Cold Brew Tea is at dinnertime.
Family dinnertime is important for us, just like it probably is for your family too. But it’s not always easy getting everyone together each night. My husband often works late and I even miss family dinner some evenings because of my schedule.
But it’s important to purposefully slow down and “detach” from all the hustle and bustle so we can spend meaningful time with those who are important to us.
While it’s not realistic to expect everyone to make every night a family dinner, there are a few things we can do to make that time count. Something as simple as including Lipton Iced Tea is a perfect way to do so.
My family doesn’t typically drink anything other than water at our mealtimes, so this Cucumber Mint Iced Tea is a treat indeed.
The last time we enjoyed this delicious beverage, we all took the time to savor the flavor and enjoy a little more down time together at the same time.
Cucumber Mint Iced Tea:
This iced tea recipe is very easy to make because it uses Lipton Cold Brew Iced Tea.
Lipton Cold Brew makes it very quick and easy to brew up delicious iced tea. There’s no boiling water or waiting for it to cool here.
Start with 8 cups of cold water in a pitcher.
Add 2 bags of Lipton Cold Brew Iced Tea. Set a timer for 5 minutes and let it steep.
You’ll want to frequently dunk the tea bags so the flavor disperses well.
When the 5 minutes are up, remove the tea bags and add 2-4 tablespoons honey. I prefer less sweet and use 2 tablespoons, but you can sweeten to your taste.
I recommend using a wire whisk to mix in the honey, because the cold water makes it more challenging using just a spoon.
Cut up 1/3 to 1/2 of a medium sized cucumber into thin slices. Drop them into the iced tea.
Next drop in a few leaves of fresh mint. You don’t have to measure, but if you did, it would be about 2-3 tablespoons or so worth of mint.
Push the mint and cucumber down into the tea so the delicious flavors can combine…
…and refrigerate for 1+ hours or until you are ready to serve your Cucumber Mint Iced Tea.
Strain the cucumber and mint from the tea. Or simply pour the tea around the cucumber and mint. (That’s what we do.)
Enjoy cold with a few ice cubes &/or slice of cucumber on each glass.
- 8 cups cold water
- 2 bags Lipton Cold Brew Iced Tea
- 2-3 Tbsp honey (I recommend raw honey)
- ⅓ - ½ medium sized cucumber, thinly sliced
- 8-10 leaves fresh mint, about 2-3 tbsp worth
- glass pitcher
- Brew the Lipton Cold Brew Iced Tea according to the package directions.
- Remove the tea bags from the cold water and whisk in the honey; sweeten to taste.
- Add the sliced cucumber and mint leaves; push down into the tea. Refrigerate for 1+ hours or until you are ready to serve.
- Strain out the cucumber and mint leaves and serve cold.
